INGREDIENTS
• 2 cups Long Grain Rice (Rinsed and clean)
• 500 grams Italian Sausage (Sliced)
• 1 cup Mushrooms (Sliced)
• 1 Roma Tomato (Diced)
• 3 cups Chicken Broth
• 1 cup Red Onion Onion (Diced)
• 4 Cloves Garlic (Minced)
• 1 cup Yellow Pepper (Diced)
• 1 tsp Dried Thyme
• 2 tbsp Cajun Spice Seasoning
• 2 tbsp Avocado Oil (or any Cooking oil)
• ½ cup Parsley (Chopped)

INSTRUCTIONS
• Heat avocado oil in a pot or large skillet over medium-high heat.
• Sauté the onion until translucent, about 3-4 minutes.
• Add the sausage and cook until browned and done.
• Stir in the diced yellow pepper and cook for 1 minute.
• Add the chopped garlic and cook, stirring, for another minute until fragrant.
• Sauté the mushrooms until tender. Add Cajun seasoning and cook for 1 minute more.
• Stir in the rice and cook for 1 minute.
• Add the chicken broth, diced tomatoes, and dried thyme.
• Cover and simmer on low heat for about 15 minutes, or until the liquid is absorbed.
• Remove the lid and fluff the rice with a fork.
•Stir in the chopped parsley.
