Ingredients:
Vanilla extract – 3 tsp
Ground cinnamon – to taste
Unsalted pumpkin seeds – 2 tbsp
Unsalted sliced almonds – 3 tbsp
Coconut flakes – 3 tbsp
Allulose – 2 tbsp (optional)
Raspberries – 1.5 cups
Part-skim ricotta cheese – 1 cup
Non-fat plain Greek yogurt – 2.25 cups
Method:
1 Mix the wet ingredients:
In a large bowl, combine the part-skim ricotta cheese, non-fat plain Greek yogurt, vanilla extract, and allulose (optional). Stir until smooth and well mixed.
2 Fold in the raspberries:
Gently fold in the raspberries — fresh or frozen both work.
3 Toast the toppings:
Preheat your oven to 375°F (190°C).
On a baking sheet, spread out the sliced almonds, coconut flakes, and pumpkin seeds.
Toss with the ground cinnamon and bake for 3–5 minutes, or until lightly golden and fragrant.
Divide and store:
Portion the creamy mixture evenly into 3 containers and refrigerate.
Divide the toasted topping into 3 small separate containers or bags and store in the pantry.
Serving 3 portions:
When ready to eat, sprinkle the toasted topping over the creamy raspberry mixture and enjoy!
