Docking at a rotating station is easy. If you are having trouble, follow these steps:
Line your ship up orthogonally to the station, nose facing the station.
Slowly approach the station.
Time your approach so you are close enough when the arm reaches your ship.
To undock simply hit the front thrusters until the clamp releases
General advice: clear all rocks around the station beforehand, otherwise you get zapped by the habitat's microwave. I almost forgot in the video.
As you can see in the video with my second docking, it's also possible to dock sideways.It's just a matter of preference.
