Velvety and Creamy Butternut Squash Gnocchi

This is one of our favorite dishes. Its so smooth and creamy and delicious, and easy to make. Enjoy!
Ingredients:
Sauce:
1 large Butternut squash
2 T avocado oil
1 medium onion
3 cloves garlic
1/2 tsp pepper
1 tsp salt
1 tsp paprika
1 tsp pumpkin spice
1 tsp cinnamon
1 cup coconut milk
1 T maple syrup
3-5 Fresh Sage Leaves
1-2 lbs gnocchi (Makes enough Sauce for 2 lbs Gnocchi)
Sauce Instructions:
Peel and cube squash then steam 10 min or until tender
Add avocado oil and sauté onion 3-5 min
Add garlic and cook 1 min
Add all the spices, maple syrup, coconut milk and the cooked squash. Simmer a couple minutes.
Add mixture to blender with 3 to 5 fresh sage leaves. (Thin with water or more coconut milk if too thick)
Gnocchi: Boil water, add gnocchi
When it floats it’s ready (about 3-4 minutes)
Stir In the sauce with the gnocchi and Enjoy!
This makes quite a bit of sauce which also tastes delicious as a soup! You can also substitute any pasta of your choice!
