Congee:
Serves 4
1 cup short grain rice
5 cups water or (chinese chicken stock)
2 inch knob ginger, sliced into coins
1 tsp salt
1 inch knob ginger, julienned
2 stalks green onion, chopped
Soy sauce to taste.
Chicken Noodle soup
Serves 4
1 Tbs Olive oil
1 yellow onion, chopped
2 cloves garlic, minced (or 1 tsp ground garlic)
3 stalks celery, 1/2 thick chunks
1 tsp italian seasoning
3 small carrots, 1/2 inch thick rounds
4 cups chicken stock
4 cups water
2 chicken breast
1 cup wide egg noodles (dry)
parsley for garnish
Mushroom Noodle soup
Serves 4
1 Tbs neutral oil
1 Tbs Ginger, minced
6+ shitake mushrooms
6oz shimeji mushrooms
3 cloves garlic, chopped
6 cups chicken or veggie stock
6 baby bok choy
1 cup carrots, julienned
1/4 cup miso
1/2 Tbs toasted sesame oil
Package of dry udon noodles
