To re-assemble, simply put the spring back on the top piece (the white part). Then, put the top piece on top of the bottom piece, ensuring that the spring stays on. At this point the spring is hanging from the top piece, so all you need to do is lift the entire scale, without tilting it, and pull the spring with your pliers. Use gravity to move the spring towards your pliers. This is easier said than done, it took me a few tries. You can also try using a string to guide the spring through the holes. Good luck!
