Sheet Pan Dinner with Delicata Squash, Apple, and Sausage

Delicata squash (available in most markets) has a nutty taste that pairs perfectly with apples and sweet Italian sausage. Ingredients and cook time listed below:
1 (1lb) Delicata squash
1 red onion
1 or 2 apples that will hold their shape as they bake ('Crispin,' 'Golden Delicious,' etc.)
5 large sage leaves
Olive oil
Salt and freshly-ground black pepper
2 or 3 sweet Italian sausages
For the mustard sauce (serve on the side)
1 generous soup spoon Dijon mustard
1 generous soup spoon whole grain mustard
1 soup spoon (or more) olive oil
Salt and freshly ground pepper
Oven temperature: 425°F. Roast squash, onion, sage, and sausages for 15 minutes. Add the apple(s), and continue to roast until the apples are soft and the sausage is done -- 15-20 minutes.
