I'm sharing some simple and awesome recipes from a cookbook that my mom put together for us after us kids moved away from home. These are not fancy (or healthy) recipes per say, but they are scrumptious and will warm your soul. We hope you enjoy!

Apple Kuchen-

Ingredients:
1/2 cup cold butter, cubed
1 box yellow cake mix (mix only)
1/2 cup coconut shreds (sweetened or unsweetened)
2 1/2 cups thinly sliced and peeled apple slices (about 2 small apples)
1/2 cup granulated sugar
1 tsp cinnamon
1 cup sour cream
2 egg yolks

Heat oven to 350℉. Use a pastry cutter or fork to cut butter into the cake mix until the butter is pea sized. Spread evenly in a 9×13 inch baking dish then sprinkle the top evenly with coconut. Press mixture down using the back of a spatula to compact it. Bake for 10-minutes in the oven.

Mix the sugar and the cinnamon in a small bowl. Set aside. Mix the sour cream and egg yolk in a medium bowl and set aside. When cake comes out of the oven, lay apple slices in a single layer until the surface is covered. Sprinkle evenly with cinnamon sugar mixture, then spread the top as even as possible with sour cream mixture. Bake in the oven for 25-30 minutes or until top is set and apples are tender.
