🌿 Methi Paratha | Ingredients
• Fresh fenugreek leaves (Methi) – 300 g
• Whole wheat flour
• Gram flour (Besan) – 2 tbsp
• Maize flour (Makki ka atta) – 2 tbsp
• Green chili – finely chopped
• Ginger – grated
• Fennel seeds – 1 tsp
• Carom seeds (Ajwain) – 1 tsp
• Cumin seeds
• Turmeric powder
• Red chili powder
• Salt – to taste
• Oil or ghee
• Water – as required
Green Chili Paste (Preparation)
• Green chilies
• Carom seeds (Ajwain)
• Fennel seeds
• Cumin seed
• Ginger
• Garlic
Method
1. Steam the methi leaves, squeeze out excess water, and finely chop them.
2. In a bowl, add wheat flour, besan, makki ka atta, steamed methi, prepared green chili paste, turmeric powder, red chili powder, and salt.
3. Mix well, add a little oil, and knead into a soft dough using water as needed.
4. Cover and rest the dough for 10 minutes.
5. Divide the dough into equal balls and roll each into a paratha.
6. Heat a tawa on medium flame and cook the paratha from both sides.
7. Apply oil or ghee and cook until golden brown.
8. Serve hot with curd, butter, or pickle.
🍅 Tomato Chutney Recipe
Ingredients
• Tomatoes – 6 medium
• Oil – 1 tsp
• Onion - 1 medium
• Cumin powder - 1 tsp
• Dry red chili powder– 1 tsp
• Garlic – 6-7 cloves
• Ginger – 1 inch
• Turmeric powder - 1/2 tsp
• Salt – to taste
• Kashmiri chili powder – 1 tsp
• Sugar or jaggery – a small pinch (optional)
• lemon juice– 1 tsp
• Water – as require
Method (Simple Style)
1. Add half cut tomatoes ,cover with lid atleast 1 minute
2. After 1 minute, check whether the tomato skin is soft or not.
Once it becomes soft, peel off the skin Add chopped green chili , ginger garlic paste and sauté for a few seconds. and mash the tomatoes.
3. Add red chili powder ,Kashmiri red chili powder, coriander powder, turmeric powder, cumin powder, lemon juice and a pinch of sugar or jaggery (optional). Mix well.
4. Cover and cook for 1 minutes then mash it well using a masher directly in the pan.
5. Adjust salt and water if needed.
6. Add fresh chopped coriander ana ready for serve.
