The knivfe was previously sharpened at 18º per side using Diamond Matrix 1100 (17 µm).
Goal: Maintain the cutting aggression of 17 µm while reducing cutting resistance.A micro-bevel was rejected as a solution due to the additional line on the bevel—“not aesthetically pleasing.”
Sharpening process:
Base sharpening at 18º per side by 17 µm diamond abrasives.
Bevel polished with 8 µm and 5 µm diamond abrasives, followed by 3/2 µm and 1/0 µm diamond polishing compound, not reaching the apex.
Result: Two knives in one — retaining the aggression and crispness of 17 µm while eliminating cutting resistance, with no micro-bevel.
