This week, we are recreating one of our favorite Asian street food items, the Taiwanese Green Onion Pancake. Usually eaten for Breakfast, this is the perfect comforting start into your day!

FIND HERE THE RECIPE FOR…
TAIWANESE GREEN ONION PANCAKES
Prep time: 20 min.
Wait time: 40 min. (resting of dough)
Cooking time: 10 min. per Pancake
Ingredients for 12 pancakes:
1kg All-Purpose flour
-Approx. 500ml Water
-5 stems of Green onions chopped
-2 tbsp Fried Onions
-½ tsp Onion powder
-5 bottoms of Green onions pureed
-Chili flakes
-½ tsp Salt + 1 pinch
-¾ tsp Pepper + 1 pinch
-100ml Sesame Oil
-A bunch of Fresh Thai Basil Leaves
-Sriracha as per taste
-Hoisin Sauce as per taste
-12 Eggs
-6 Sausages (optional)
Ingredients for Homemade Bubble Tea per person:
-1 cup of Water
-Tapioca pearls as desired
-1,5 tsp Tea leaves
-2 tsp Evaporated Milk
-Ice cubes
-3,5 tsp Sweetened condensed milk
Equipment and Tools:
-Bowl
-Spatula
-Rolling pin
-Frying Pan
-Brush
Instructions:
1. In a bowl, combine the Flour, Salt, Pepper, Onion powder and Fried onions. Crush the Fried onions into small pieces and give everything a mix.
2. Then add half of the Sesame oil, the pureed bottoms of Green onions and the Water gradually, mix everything until it starts forming dough balls. Refer to Chef Sha’s Top Tip for the water temperature.
3. Place the dough onto the work station and knead it until everything is combined, form the dough into a ball and let it rest for 10 min.
4. After resting the dough, divide it into 12 equal portions.
5. Apply Sesame oil onto your work station with a brush. Then roll down each ball as thin as possible.
6. Sprinkle the Green onions evenly on top and Chili flakes as desired.
7. Tap, lift and roll up the pancakes into a swiss roll shape following video instructions. Let them rest for another 30 min.
8. Finally roll the dough snakes out to a ½ cm thick pancake.
9. Heat up a pan on medium heat.
10. Cook the Pancakes halfway.
11. When ready to eat, reheat the pan on medium heat. Cook the Pancakes until crunchy and nicely browned.
12. Chef Sha’s Top Tip: Use a chopstick to fluff them up and get a flaky consistency.
13. Cook the Sausages at the same time (optional).
14. Then spread one Egg per Pancake on top and let it cook.
15. Finally spread Sriracha and Hoisin Sauce on top, as well as fresh Thai Basil leaves.
16. Fold up the Pancake into a Taco shape. VOILÀ!! ENJOY!!
Instructions Bubble Tea:
17. Prepare the Tapioca pearls based on package instructions. Ensure you have Ice.
18. Boil the Water and add in the Tea leaves of your choice. Once infused, add the Evaporated milk and let it simmer for another 10min. Strain the Tea and let it cool down all the way.
19. To assemble, pour desired amount of Sweetened condensed milk into a glass, add 1/3 of the Tea and dissolve. Then add in the Tapioca pearls, fill the rest of the glass with Tea and add ice cubes as desired.
