Aaj hum bana rahe hain Mahua ka swadisht aur paramparik halwa, jo gaav ki purani recipe hai aur swad ke saath-saath poshak bhi hota hai.
Is recipe ke liye sabse pehle mahua ko raat bhar paani mein bhigo diya jata hai. Subah use saaf paani se do se teen baar achhi tarah dho liya jata hai, taaki saari gandagi nikal jaaye. Uske baad mahua ko mixi mein grind karke ek smooth paste bana liya jata hai.
Ab ek kadai mein ghee garam kiya jata hai. Ghee garam hone par mahua ka paste daal kar medium aanch par lagatar chalate hue bhuna jata hai. Jab mahua achhi tarah bhun jaata hai aur uska paani poori tarah sukh jaata hai, tab usmein dheere-dheere dudh add kiya jata hai.
Iske baad gas ko low flame par rakh kar lagatar milaya jata hai, phir thodi der baad flame ko medium kar diya jata hai. Ab swad anusar chini daal kar achhi tarah mix kiya jata hai. Aakhir mein pasand ke dry fruits daal kar halwe ko 2–3 minute tak bhuna jata hai.
