This recipe made 28 500ml jars of Pimenta Moída ou Pimenta Malagueta/Portuguese Pepper Sauce
Ingredients
25 pounds of Pimentas (hot) Malagueta (Goat Horn Peppers)
25 pounds of Pimentas (medium-hot) Crimson Peppers
500 grams of salt plus 3 tablespoons
2-3 Tablespoons of vegetable oil to be placed in each jar after you jar your pepper sauce (this helps preserve the pepper sauce)
Once the peppers are grinded add 250 grams of salt per 25 pounds of peppers
I used approximately 50 pounds of peppers and added 500 grams of salt plus 3 Tablespoons
Cover the pepper sauce with a large plastic bag and mix the pepper sauce everyday (1 time a day) for 7-8 days)
Utensils/Tools needed
Wooden spoon
Aluminium foil
Knife
Large bucket
1-2 large plastic bags or garbage bag
Grinder
*you can use a Weston 10 or 12 grinder machine with a Grinder stainless steel plate attachment (link below)
Ingredientes

25 libras de Pimentas (meia picante) Crimson Peppers
500 gramas de sal mais 3 colheres de sopa
2-3 colheres de sopa de óleo vegetal para colocar em cada frasco depois de colocar a pimenta moída (isso ajuda a preservar a Pimenta moída)
Assim que as pimentas estão moidas, adicione 250 gramas de sal para cada 25 libras de pimentas
Usei aproximadamente 50 libres de pimentas e adicionei 500 gramas de sal mais 3 colheres de sopa
Cubra a baldo de Pimenta moída com um saco plástico grande e misture a pimenta moida todos os dias (1 vez por dia) durante 7-8 dias)
