Pesaha Appam — a very specific and culturally significant dish in the Syrian Christian community of Kerala, India.
Pesaha Appam (also called Kurishu Appam) is an unfermented rice cake made traditionally on Maundy Thursday (the Thursday before Easter), known as Pesaha Vyazham in Malayalam. This dish is part of the Passover meal (Pesaha means "Passover") observed by Saint Thomas Christians to commemorate the Last Supper of Jesus Christ.

Unfermented – Unlike regular appam, Pesaha appam is not fermented.

Made with rice flour, urad dal (black gram), and sometimes a bit of coconut.

A cross made from palm leaves (from Palm Sunday) is often placed on top before steaming.

Steamed like an idli or often in a flat pan.

Accompaniment:

It's always served with Pesaha Paal – a special syrupy jaggery-coconut milk mixture flavored with spices like cumin and garlic. The combination is both symbolic and traditional.

Ritual:

On Pesaha night, the family gathers for prayers, hymns, and a ceremonial breaking and sharing of the appam dipped in Pesaha Paal, often led by the head of the family — echoing the Christian Last Supper.

INGREDIENTS
For appam
Water: 1/2 cup
Ruce flour: 1 cup
Urad dhal: 1/4 cup
shallots: 5
cumin seeds: 1/2 tsp

Pesaha paal
Jaggery: 250 gm
Coconut milk: 1 and a half cup
rice flour: 3 tbsp
Cumin powder: half tsp
Dry ginger powder: half tsp
Cardamom powder: half tsp
Salt a pinch optional
