Instant Chole -

PURANI DILLI CHOLE
Preparation time 15 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Cooking Chole
500 gms Chickpeas (soaked overnight) भीगे हुए छोले
½ tsp Turmeric powder, हल्दी पाउडर
2-3 no. Garlic cloves (optional) लहसुन
Prepared bouquet garni, मसालों की पोटली
Water as required, पानी
3 tbsp Ghee, घी
Salt to taste, नमक स्वादअनुसार
3-4 tbsp Tamarind pulp, इमली का पानी
1 tsp Jaggery, गुड़
4 heaped tbsp Prepared masala, तैयार किया हुआ मसाला
1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
½ cup Chickpeas water, छोले का पानी
Prepared tira, तैयार किया हुआ तीरा
2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Bouquet garni
3 no. Black cardamom, बड़ी इलायची
2 tsp Black peppercorns, काली मिर्च के दाने
1 tbsp Tea leaves, चायपत्ती
3-4 no. Cloves, लौंग
4 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
For Masala
3 tbsp Coriander seeds, धनिये के बीज
½ tbsp Cumin seeds, जीरा
3-4 tbsp Black peppercorns, काली मिर्च के दाने
7 no. Black cardamom, बड़ी इलायची
8-10 no. Green cardamom, हरी इलायची
4-5 no. Cloves, लौंग
1 tsp Fennel seeds (optional) सौंफ़
Salt to taste, नमक स्वादअनुसार
For Gajar Mirch Ka Achaar
1 cup Water, पानी
2 medium Carrots (peeled & cut into batons) गाजर
2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Vinegar, सिरका
2 tbsp Jaggery, गुड़
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
1 tsp dry Mango powder, आमचूर पाउडर
For Ginger Green Chilli Paste
4 inch Ginger (peeled & chopped) अदरक
5 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
For Tira
3-4 tbsp Oil, तेल
2-3 tbsp Ghee, घी
1 tsp Cumin seeds, जीरा
Prepared Ginger Green chilli paste, अदरक हरी मिर्च का पेस्ट
A pinch of asafoetida, हींग
2 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
200 ml Ghee, घी
For Searing Kulcha
1 tsp Ghee, घी
2 no. Kulcha, कुलचा
1 tbsp Prepared tira, तैयार किया हुआ तीरा
Other Ingredients
3-4 tbsp Red tamarind (soaked for 1hr) भीगी हुई लाल इमली
For Garnish
Coriander sprig, धनिया पत्ता
Green chilli, slit into half, हरी मिर्च
Lemon wedge, नींबू की फांक
Process
For Cooking Chole
● In a pressure cooker, add soaked chickpeas, turmeric powder, garlic, prepared bouquet garni, water as required, ghee and mix well.
● Cook it for 3-4 whistles until cooked well.
● Open the lid, add salt to taste, tamarind pulp, jaggery, prepared masala, crushed black peppercorns, chickpeas water and let it simmer for 10-12 minutes until thickens.
● Finish it with prepared tira and fresh coriander leaves.
● Transfer it to a serving dish, garnish it with coriander sprig, green chilli and lemon wedge.
● Serve hot with seared kulcha.
For Bouquet Garni
● Take a small piece of muslin cloth, add black cardamom, black peppercorns, tea leaves, cloves, dry kashmiri red chillies and make a potli of it.
● Keep it aside for further use.
For Masala
● In a pan, add coriander seeds, cumin seeds, black peppercorns, black cardamom, green cardamom, cloves, fennel seeds, salt to taste and dry roast them until it's aromatic.
● Transfer it to a mixer grinder jar and grind it into fine powder.
● Keep it aside for further use.
For Gajar Mirch Ka Achar
● In a pan, add water, carrots, green chilli and let boil it for 7-8 minutes.
● Add vinegar, jaggery, degi red chili powder, turmeric powder, coriander powder, dry mango powder and simmer for 4-5 minutes.
● Transfer it to a bowl or cleaned jar and keep it aside for further use.
For Ginger Green Chilli Paste
● In a mortar pestle, add ginger, green chillies and grind it into coarse paste.
● Keep it aside for further use.
For Tira
● In a handi, add oil, ghee, once it's hot, add prepared ginger garlic paste, a pinch of asafoetida and cook it for 2-3 minutes.
● Add degi red chili powder and cook for a minute on low flames.
● Finish it with ghee and let it cook for a while.
● Turn off the flames and keep it aside for further use.
For Searing Kulcha
● In a pan, add ghee, once it's hot, place kulchas, pour some prepared tira and sear the kulchas on both the sides until it's golden in colour.
● Transfer it to a serving dish and serve hot with prepared chole.
