Hello, I am Casayun.
In this video, I will be sharing how to make Italian almond cookies.
You don’t need flour for this recipe. Using lots of almond flour and egg whites to give chewy and soft texture.
The ingredients are very simple and super easy to make!

Amaretti
15 cookies
Egg whites 2 (cold / about 65-70g)
A pinch of salt
Almond flour 190g (2 cups)
Sugar(granulated) 110g (½ cup)
Vanilla extract 1 tsp
For coating
Sugar 30g (2 Tbsp)
Powdered sugar 20g (2 Tbsp + 1 tsp)
1. Put egg whites and a pinch of salt in a clean bowl. Whip until firm peaks are formed.
2. Add the sifted almond flour and sugar in two portions. Add in vanilla extract. Fold the dough using a spatula and mix evenly.
3. Divide the dough into small balls and coat each dough in the order of sugar - powdered sugar. Place the dough on a tray lined with a baking sheet and lightly press the top with your hand.
4. Bake in an oven preheated to 170℃ (338℉) for 18-20 minutes.
