I planed on doing what I call a hybrid cook. I start out on the OK Joe off set to get some good smoke flavor onto the beef, then when It comes time to wrap the brisket I move it to the Faux Kamado. The Kamado wont use anywhere near as much charcoal and with the temp control device it basically becomes set it and forget it. But as Usual things didn't go as planned. Want to see me Get angry??
