We are in Naples for this exciting episode featuring Maria. She showed us how she makes frittata di pasta, a staple of the cucina povera and a clever way to reuse leftover pasta. Especially tied to Naples and the surrounding areas in Campania, this dish has many variations. Traditionally served as a picnic dish, it’s perfect eaten at room temperature, making it ideal for outings and gatherings. Maria shares her recipe:
300g cooked tagliatelle (durum wheat, not egg-based)
4 eggs
30g aged Parmesan cheese, grated
150g smoked Provola cheese, diced
Plenty of black pepper
Plenty of salt
Sunflower oil, for cooking
