Spanish Beef Tips with Tomatoes & Green Chiles
Ingredients:
1 ½ to 2 lbs of stew meat, cut into bite-sized pieces
1 small onion, thinly sliced
2 bay leaves, dried
1 can petite diced tomatoes (14.5 oz), undrained
1 can diced green chiles (4 oz)
Salt & pepper to taste
Directions:
1. Heat 1-2 tbsp of olive oil to skillet over medium-high heat. Add stew meat, onion, bay leaves, and salt & pepper and cook for 6-8 minutes; until the meat is browned and the onion is softened.
2. Add canned tomatoes and stir.
3. Bring to a simmer, turn the heat down to low/medium low, cover and cook for 1 to 1 ½ hours, until meat is tender and sauce has thickened, stirring every 15 minutes or so. The longer you cook, the more tender the meat will be. If the liquid gets too low, add a splash of water if needed.
4. Remove bay leaves.
5. Stir in green chiles, cover and heat for 2-3 minutes.
6. Taste and add salt & pepper as needed.
Serve in flour tortillas as tacos or over a bed of white rice .
