Mardi Gras King Cake Recipe:
3 ½ cups all purpose flour (plus additional if needed)
1 (1/4 oz.) package quick rise yeast
1 cup soy milk (or other non-dairy milk)
¼ cup sugar
1 tsp salt
6 tbsp JUST Egg
6 tbsp unsalted vegan butter, softened, cut into 12 pieces
Cinnamon Filling:
2/3 cup packed light brown sugar
1 ½ tsp ground cinnamon
4 tbsp unsalted butter, softened
Icing:
2 cups powdered sugar
2-3 tbsp non-dairy milk or water
1 tsp vanilla extract
Colored Sugar with Watkins Food Coloring:
Gold Sugar: 1/8 cup sugar + 5 drops yellow
Green Sugar: 1/8 cup sugar + 10-12 drops green
Purple Sugar: 1/8 cup sugar + 10 drops red + 5 drops blue
