Day 11 of my 12 Days of Dollar Tree Christmas Desserts 🎄✨

Today we’re making Red Velvet Whoopie Pies, soft, cake-like red velvet cookies sandwiched with a fluffy cream filling. Festive, nostalgic, and perfect for holiday parties or gifting.

INGREDIENTS:
• Red velvet cake mix
• Red Velvet (or chocolate) pudding mix
• 2/3 cup water, 1/2 cup oil, 3 eggs
• Frosting (Cream cheese, buttercream, or both!)

INSTRUCTIONS:

In a bowl, mix together the red velvet cake mix, pudding mix, water, oil, and eggs, until a thick batter forms.

Scoop the batter onto a parchment-lined baking sheet, leaving space between each one.

Bake at 350°F for 11-12 minutes until the tops are set and the cookies spring back lightly when touched. Let cool completely.

To assemble, spread or pipe frosting onto the flat side of one cookie, then sandwich with another.
