If you hover over some of the different values, sometimes a pencil icon will appear which means you can edit them in the report. The ones that have a lock icon mean you can't edit that field.
When you hit save, you'll also need to refresh the report to see the new data.
You can also turn off report inline editing by going to Set Up - Reports and Dashboards - Settings and unchecking Enable Inline Editing in Reports (Lightning Experience Only).
