PEACH & NECTARINE CRUMBLE RECIPE:

Topping:
60g oats
100g plain white flour
60g sugar
60g butter
zest of 1/2 lemon (optional)

3 peaches
2 nectarines
1 tsp cinnamon
40g sugar
juice of 1/2 lemon (optional)
(make sure your fruit is ripe and sweet, if it's sour then increase sugar x2)

Remove pits from fruit, cut into large chunks. Place into a baking dish (mine was about 6in/16cm in diameter), add cinnamon and sugar. Bake in the preheated oven at 180C/ 355F for 15 mins until fruit soften and begin to caramelise.

In the meantime make the topping. Chop butter into small cubes ( I use salted butter so I don't add any extra salt), place into freezer while you prep other ingredients. Combine flour, sugar, oats and lemon zest. Add cubed butter and mix with a table knife until butter is coated in flour. Then rub by hand into a crumble - butter shouldn't melt but it should incorporate together with the dry ingredients and form a kind of bead shaped texture.

Take fruit out of the oven, top with crumble topping and put back into the oven at 180C/ 355F for 15-20 mins until golden. Serve warm with ice cream, custard or yoghurt on top.
