ALL AMERICAN HOT DISH (pg 39)
1lb ground beef
1 medium onion, chopped (about 1/2c)
1 - 8oz can whole kernel corn, undrained
1 - 8oz can tomato sauce
1/4c sliced black olives
2c uncooked macaroni (about 4oz)
2c water
1tsp dried oregano leaves
1/2tsp salt
1/4 pepper
1 large tomato, chopped
1c shredded cheddar cheese (4oz)
Cook ground beef and onion in a 10" skillet, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients except tomato and cheese. Heat to boiling; reduce heat.
Simmer uncovered about 20 minutes, stirring occasionally, until noodles are tender. Stir in tomato; sprinkle with cheese. Coer and let stand about 5 minutes or until cheese is melted. 4 servings.
MOZZARELLA AND TOMATO MELTS (pg 72)
4 slices Italian bread, each 1" thick
8oz mozzarella cheese, sliced
2 medium tomatoes, thinly sliced
freshly ground pepper to taste
1/2c prepared pesto
Set oven to broil. Place bread on rack in broiler pan. Broil with tops about 4" from heat until golden brown; turn. Divide cheese among bread slices. Broil until cheese just begins to melt.
Arrange tomatoes on cheese. Sprinkle with pepper. Top with pesto. Makes 4 open face sandwiches.
CHICKEN AND FETTUCCINE DIJON (pg 85)
6oz uncooked spinach fettuccine
1/2c chopped onion
2 cloves garlic, crushed
2 Tbsp butter
1c milk
1/2c white wine
2 Tbsp chopped fresh parsley
2 Tbsp Dijon mustard
3oz cream cheese with chives
1 1/2c cut up cooked chicken or turkey
Cook fettuccine as directed on package; drain. Cook onion and garlic in butter in 3 quart saucepan over medium heat, stirring frequently until onion is tender. Stir in remaining ingredients except chicken. Stir until cream cheese is melted.
Add chicken and hot fettuccine to cheese mixture; toss until evenly coated. Cook until hot. Sprinkle with chopped fresh chives if desired. Makes 4 servings.
