Pumpkin Carrot Soup (No Garlic-Onion) Recipe

Makes 2 big bowls of soup
1/2 pumpkin, skin removed & cut into cubes
1 carrot cut roughly
1 small tomato cut roughly
1 tbsp ginger finely chopped
Heat pressure cooker, add 1-2 tbsp butter, ginger, saute for a minute, then add the pumpkin & carrot. Saute for a minute or two, then add tomato with 1 tsp salt. Let the tomato soften, then add 1 cup water. Bring to a boil & cover lid of pressure cooker & cook for 4-5 whistles on low flame. Once the cooker has released all the pressure, cool down the mixture. Blend it & keep its stock water seperately. Now in the same cooker or another pan, add the blended mix along with its stock water & bring to a boil on low flame. Garnish with crushed pepper & serve hot. Pumpkin Carrot Soup is now ready!
