Simple technique to take your "steak game" to the next level! By starting the steak in the oven, the moisture on the surface of the steak will dry out enabling you to get a superior crust/sear while leaving the interior tender and juicy.
Temperature and Timing for Reverse Seared Steak For 1 1/2–Inch Steaks in a 300°F
Doneness / Target Temp in Oven /Final Target Temp /Approx Time
Rare 105°F 120°F 15 to 20 minutes
Medium-Rare 115°F 130°F 20 to 25minutes
Medium 125°F 140°F 25 to 30 minutes
Medium-Well 135°F 150°F 30 to 35 minutes
Board Dressing :
1 Tbsp rosemary
T Tbsp thyme
1/2 C parsley
1 garlic clove
1/2 Tbsp kosher salt
2 Tbsp olive oil
1/4 tsp balsamic vinegar
Fresh cracked pepper to taste
Directions
Chop herbs, grate garlic and mix together all remaining ingredients on cutting board. Spread to create a "bed" for your steak. Slice steak and turn to coat each slice with board dressing and enjoy!
