After retiring from a busy, demanding career as a RN, and after my 5 children are grown and have their own careers and children, I realize that retirement is an ongoing journey of changes and adjustments. I will share some of my experiences and welcome others to share what makes their golden years of retirement enjoyable and fulfilling.
Fall is in the air! In My Kitchen, I’m preparing Chicken Spaghetti with Rotel and Velveeta to put in small casserole pans to give to friends or neighbors after being in the hospital or a death in the family or just needed. This recipe makes a lot. So it will make a full 9x13” casserole dish for a family dinner or church pot luck dinner. It is easy to prepare and easy delicious.
With the cooler weather, Maize will need her sweater tonight. So after her walk, she gets a good brushing, teeth brushed, and gets her sweater on. She is such a cold natured little dog, she has several sweaters and jackets.
We hope you are enjoying our fall weather and will try this satisfying meal.
On Thursday, I will prepare the Apple Cake to go in my little freezer to go along with the casserole.
CHICKEN SPAGHETTI WITH ROTEL AND VELVEETA
Use a large boiler or stock pot to boil the chicken, then the spaghetti in
4-5 cups cooked chicken, shredded
16 oz spaghetti, cooked according to package directions
If boiling your own chicken, cook the spaghetti in the broth the chicken boiled in, reserving 1 cup broth for the sauce
Sauce:
1 pound (16 oz.) Velveeta
4 oz. Cream cheese
1 can cream of chicken, or mushroom, soup
1 10 oz can Rotel
1 teaspoon ground black pepper
In large boiler, add all of above, heat on low heat, stirring often, until cheese is melted
In the largest pot the spaghetti is in, add the shredded chicken and the sauce. Combine well. Pour into 9x13” oiled casserole dish or 4 smaller aluminum pans to put in freezer. Top with grated cheese and chopped green union tops.
Bake at 350 degrees until the casserole is bubbly and cheese is melted.
Store leftovers in refrigerator. Freezes well,
