Strawberries are in the season and today I’m here to share with you one of my favourite tea cake recipes that you can make right now with them - Strawberry Upside Down Cake 🍓🩷
It’s as easy to make as it is delicious, picture-perfect, and goes perfectly well with tea or enjoy it as a dessert post meal.

Strawberry Upside-Down Cake
Ingredients:
 • For the base:
 • 200–250g strawberries, halved
 • ½ cup sugar
 • 2 tbsp water
 • For the cake batter:
 • 3 eggs
 • 1 cup sugar
 • 1 cup oil
 • 1 tsp vanilla extract
 • 1 cup refined flour
 • 1 tsp baking powder
 • 1 tsp baking soda
Method:
 1. Prepare the pan: Grease and flour an 8-inch cake pan, then line the bottom with parchment paper. Arrange the strawberry halves in a circular pattern, covering the entire base.
 2. Make the caramel: In a saucepan, heat ½ cup sugar and 2 tbsp water until it turns into a golden caramel. Carefully pour the caramel over the strawberries and let it set.
 3. Make the batter: In a bowl, whisk together eggs, sugar, oil, and vanilla extract until well combined.
 4. Sift in flour, baking powder, and baking soda. Gently whisk to incorporate everything.
 5. Assemble & bake: Pour the batter over the strawberries and bake in a preheated oven at 180°C for 40–45 minutes, or until a skewer inserted in the center comes out clean.
 6. Unmold while warm: Once the cake has slightly cooled, carefully invert it onto a plate while still warm to prevent the caramel from sticking. Peel off the parchment paper.
 7. Serve: Enjoy this gorgeous cake with tea or a scoop of ice cream—perfect for a cozy dessert!
