Toppings - crab claws, shredded crab meat, pig trotter, sliced pork - are also dipped in the broth for 30 seconds, then added to the bowl. Add blood pudding and fried dough to the bowl. Top with some chopped cilantro and scallions.

Add Foie gras. Weigh Truffle on the scale, then slice into the bowl. Pour the hot broth and finally, add ground pepper
