"The month of July is drawing to a close, and I'm still crossing my fingers in anticipation that August will reward us with rays of sunshine, and one final summery hug before we enter the embrace of Autumn.
In today's video, I finally had the opportunity to tidy the garden, with lots of pruning, staking, cutting back and feeding the soil after such a tumultuous weather system hanging over Ireland this month. The kitties joined me in the studio to help me pack some orders, and complete a special commission I've been working on.

💕 Gillian's Tomato Jam Recipe:
Boil 10-12 large tomatoes with 3 Tablespoons of brown sugar. Keep on the boil until bubbling, then reduce the heat to a simmer until the texture turns thick and jam-like.
Remove any tomato skins that appear on be surface. Then add in a pinch of pink salt,
a good sprinkle of pepper, and I added in some thyme from the garden or any herb of your choosing. Then add the hot mixture to a sterilised jar and store in the fridge once cooled.
💕 Gillian's Summer Fruits Crumble Recipe:
Add a punnet of washed raspberries and 2-3 peaches (washed, sliced and skins peeled) to a greased baking dish, add a good splash of orange juice or the juice from canned peaches if you're not using fresh ones. Set aside and next make your crumble. In a bowl add 100 grams of plain flour (or oat/almond flour) and 75 grams of golden brown sugar. Melt 50 grams of butter and a dash of vanilla extract in a microwave/stove top and add this bit by bit into the flour/sugar bowl while mixing it in with a knife. Keep doing this until a crumb texture is formed. Sprinkle the crumble onto the fruit until covered and place in the over at 170 degrees celsius and bake for 30-40 mins. Enjoy with a dollop of ice cream or greek yogurt.
