Instructions:
Crack the egg into a blender or food processor. Add the Dijon mustard and vinegar or lemon juice.
With the blender or food processor running, slowly drizzle in the oil in a steady stream. This process emulsifies the ingredients, creating a thick and creamy mayo.
Continue blending until all of the oil has been incorporated and the mayonnaise is smooth and creamy.
