How to Make Simple Stir-Fried Green Beans
INGREDIENTS
2 tablespoons vegetable oil
6 cloves garlic, chopped
3 mini sweet peppers (optional)
2 tablespoons sesame seeds
SAUCE MIXTURE
1 tablespoon soy sauce
2 teaspoons brown sugar
1 tablespoon sesame oil
3 tablespoons oyster sauce
INSTRUCTIONS
In a small bowl, combine the soy sauce, brown sugar, sesame oil and oyster sauce. Mix well and set them aside.
Working with a handful of green beans at a time, trim off the top and bottom ends of the beans.
Smash a clove of garlic with the flat side of the knife. Remove the peeling then chop the garlic.
Remove the seeds from the sweet pepper then slice them into a thin strips.
TO BLANCH GREEN BEANS
Bring a large pot of water to boiling and add salt.
Boil the beans for 2 minutes. Drain and shock the beans quickly by plunging them into ice water. This will help stop the cooking process and preserve the bright green color.
STIR-FRIED GREEN BEANS
Heat oil in a wok or a large skillet over medium-high heat.
Add the garlic and saute until fragrant, about 30 seconds.
Add the beans and continue to cook until coated in the oil and heated through, about 2 minutes. Add the sauce mixture. Toss well and continue cooking for about 2 minutes or until beans are just tender but still crisp.
Add a tablespoon of water to get all the last drops of the sauce mixture.
Add the sweet pepper and continue cooking. Lastly add sesame seeds. Toss well and turn off the heat. Transfer to a serving bowl.
