Today I’m preparing Pad Thai, one of Thailand’s most beloved street food dishes.
Usually, I like to create meals inspired by other cuisines, but this time I tried to stay as close to the authentic Pad Thai method as possible — even without a wok!
I didn’t have garlic chives, shallots, or sweet radish, but I used what I had to keep the balance of flavour and texture right. Between the tamarind, fish sauce, eggs, noodles, and peanuts, I think the final result came out pretty close to the real thing!
