Ingredients for Degi Mutton Korma:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Mutton - 750 gms (curry cut with fat and bones)
Fried onion/ cashew paste:
Fried onions- 3 tbsp
Cashew nuts- 8
Milk- 1/2 US cup
Degi Masala-
Black cardamom-2
Green Cardamom- 4
Cinnamon-1 small piece
Cloves- 5
Cumin seeds-3/4 tsp
Black peppercorns -1/2 tsp (around 15 nos)
Mace (javitri) -Half flower
Nutmeg(Jaiphal)- small piece
Dry rose petals -1 tsp
(Use 3/4 tsp of this powder for 750 gms)
For cooking mutton:
Onions, roughly chopped -2 medium ( 120-130 gms)
Turmeric powder- 3/4 tsp
Red Chilli Powder-1.5 tsp
Coriander powder- 2 tsp
Salt-2 tsp
Green cardamom-5
Cloves-5
Cinnamon -1 piece
Bay leaf-2
Dry rose petals -1 tsp
Ginger garlic paste-1.5 tbsp
Whisked curd /plain yogurt-120 ml (5-6 tbsp)
Oil /Ghee - 5-6 tbsp
Water-250 ml
Other Ingredients:
Keora water-1 tsp
Green chillies, sliced into two -3 for garnishing
Preparation:
Wash and keep the mutton pieces, preferably pieces with fat and bones.
Roughly chop 2 medium onions.
Whisk the curd/plain yogurt.
For the Degi Masala powder, add all the items to a grinder and grind to a powder. Use 3/4 tsp of this powder.
For the fried onions, slice one big onion (100 gms) and fry in oil till golden brown in colour. Remove and allow to cool.
Now to a grinder add the fried onions, the cashew nuts and 1/2 cup of milk. Blend to a paste.
Make sure the milk that you use in this recipe is boiled and cooled to room temperature.
Process:
Take a pressure cooker and add all the ingredients including oil and water.
Mix well and close pressure cooker.
Pressure cook for 4 whistles. (On high heat till 1st whistle (around 6-8 mins), then another 3 whistles on low heat. (A total of 15-18 mins)
In case you’re not using a pressure cooker you can also use a pan or pot or kadhai. It will take around 45 mins on low heat.)
Allow the pressure to release on its own and then remove the lid.
Add the fried onion-cashew paste made in the blender. Also add 3/4 tsp of the homemade Degi Masala powder and the Kewra water.
Mix and cook for around 5 mins on low heat.
Lastly add the sliced green chillies.
Mix and cover and simmer for around 2 mins till oil separates.
Serve with roti or rice.
