No Bake Cheesecake Mandarin Orange – Easy to Make - Simple Recipe for Everybody

Light and fruity mandarin cheesecake with sour cream creates a very fresh taste, with both a pleasant sweetness and sourness. Topped with mandarin jello pieces and fresh pomegranate seeds - so excellent pairing fruity flavour. This cheesecake is also good for winter season.
Ingredients for 12 pcs
Mold 20 cm – 7,8 in
1 cup (measuring ingredients) or 8 fluid ounces = 237 ml
Base:
• 200 g – 7 oz - 1 ¾ cup – crushed biscuits (you can use any biscuits or cookies you like)
• 50 g – 1,7 oz – ¼ cup - unsalted butter (melted)
Cheesecake Filling:
• 250 g – 8,8 oz quark (you can use also cream cheese)
• 200 g – 7,05 oz sour cream
• 250 g – 8,8 oz mascarpone cheese
• 300 g – 10,5 oz whipping cream
• 6 tbsp sugar powdered
• 2 tsp lemon juice
• 20 g gelatin powder
• ½ cup water
Mandarin Orange Pureé
• 250 g – 8,8 oz fresh peeled mandarins orange (I used clementines) + a few mandarin slices into mold
• 50 g – 1,7 oz sugar granulated
• 2 tsp lemon juice
• 1 anise star (optional)
Mandarin Orange Jelly
• 100 g – 3,5 oz – mandarin orange pureé
• 4 g – 0,14 oz - gelatin powder
• 2 tbsp water
• orange food color (optional)
Top Mandarin Orange Jelly Glaze
• 50 g – 1,7 oz – mandarin orange pureé
• 70 g – 2,5 oz – mandarin juice
• 1 tsp sugar powder
• 40 g – 1,4 oz – whipping cream
• 75 ml – water
• 10 g – 0,35 oz – 2 tsp gelatin powder
• orange food color (optional)
Topping:
• pomegranate seeds
• mandarin orange jelly cubes
• whipped cream (optional)
Tips for success!
• I used cinnamon biscuits, which is an excellent flavour combination with mandarin orange.
• This cheesecake is not too much sweet, so if you prefer sweeter one, add more sugar.
• Read carefully instruction with gelatin, can be different for each product/producer.
• Keep the cake in a cool place, or better chill in the fridge until serving.
