🍞 Herb & Onion Bread Ring – Lammas Recipe
This harvest bread is shaped like a wheel to honor the turning of the seasons. It’s rich with herbs and sweet onions – perfect for celebrating the grain harvest and the soon to come 'Kräuterweihe' (German tradition of Herb Consecration).
Ingredients (for 1 ring):
• 3½ tbsp (50 g) butter
• 1 cup (¼ liter) lukewarm water
• 0.9 oz (25 g) fresh yeast (or about 2¼ tsp active dry yeast)
• 2½ cups rye flour (300 g)
• 2½ cups all-purpose or bread flour (300 g)
• ¾ tsp salt
• 1 (or more!) tbsp chopped herbs (marjoram, sage, tarragon, basil, fresh parsley)
• Some chopped onion
• Oil to lightly grease your baking sheet
Instructions:
1. Melt butter in the lukewarm water.
2. Stir in the yeast until dissolved.
3. Sift rye flour and half of the white flour into a bowl. Add salt.
4. Mix in the yeast liquid and knead into a smooth dough.
5. Cover and let rise for more or less 60 minutes.
6. Preheat oven to 375°F (190°C).
7. Knead in the rest of the flour and the herbs & onion.
8. Shape into a loaf, poke a hole in the middle with the end of a wooden spoon, and widen into a ring.
9. Place on a lightly greased baking sheet. Cover and let rise for another 20 - 30 minutes.
10. Brush with water and dust with flour.
11. Add 1 cup of water to the bottom of the oven at the start, to create some steam.
12. Bake 20–30 minutes.
