Bacon and Egg Muffins - Easy Breakfast

Bacon and egg muffins are a complete breakfast in one bite. I find them a great weekend breakfast idea as they are so easy to make and the kids love them. How can you go wrong with the bacon, toast, and eggs all cooked together. Get the recipe: https://cooknshare.com/recipe/bacon-e...

As always, there are a few variations to the recipe. For example, the cheese is totally optional, but I do find it adds a nice touch. We use old cheddar cheese, but if you do decide to use it, you can use your favorite cheese. The parsley helps to add some color but it can be left out or substituted with one of your favorite spices. Actually, some chopped scallions might be a welcomed addition. Both white and brown toast work nicely in the dish, as well.

Our bacon and egg muffins are baked for 15 minutes which allows the yolk to be fairly runny. If you want a really runny egg, lessen the time; on the other hand, if you want a hard yolk, let them bake for a bit longer.
