Ingredients -:
3 cups [cooked and chilled] long-grain white rice (Basmati or Jasmine work well)
2–3 tbsp neutral oil (like vegetable, canola, or peanut oil)
1 tbsp finely chopped garlic
1/2 cup finely chopped onion or the white parts of scallions (spring onions)
1–2 cups mixed vegetables, finely chopped (e.g., carrots, French beans, bell peppers, cabbage, peas, corn, or broccoli)
1–2 tbsp soy sauce (use tamari for gluten-free)
1 tsp rice vinegar (optional, for tang)
1/2–1 tsp black pepper powder, to taste
Salt to taste
1 tsp toasted sesame oil (for finishing)
Chopped green parts of scallions for garnish
