Hello and Happy Valentine's and Galentine's Day my Friends, welcome to my Southern Kitchen!
Have I've got a Southern Treat for y'all for you Sweetheart and Girlfriends for Valentine's and Galentine's Day, today's recipe I am taking Red Velvet to the next level; we are making Red Velvet Yeast Donuts from Scratch! Soft, pillowy, with a hint of chocolate, and drizzled with a luscious Cream Cheese Glaze on top, these are so heavenly and you would want to make these every year! Y’all will definitely love and enjoy these.
Yeast Mixture
1 envelope active dry yeast
1 teaspoon white sugar
1/4 cup warm water (110 Degrees)
Donuts
1/2 cup white sugar
1 teaspoon table salt
1 cup lukewarm evaporated milk
1/2 cup lukewarm coffee (regular or decaf)
2 extra-large eggs, room temperature
1 teaspoon distilled white vinegar
1 teaspoon pure vanilla extract
1/3 cup lard
1 tablespoon unsweetened cocoa powder
1 tablespoon liquid red food coloring
5 cups bread or all-purpose flour
Canola, Vegetable, or Peanut Oil, for frying
For the Yeast Mixture: In a measuring cup, add in the water, 1 teaspoon sugar, and active dry yeast, stir until well mixed and let it sit until it rises and puffy about 10 minutes.
In a medium bowl, add in the cocoa powder and red food coloring, stir until combined, it will create a paste. Set aside.
For the Donuts: In a bowl of a stand mixer with dough hook or a large bowl using an electric hand mixer, add in the sugar, salt, yeast mixture, evaporated milk, coffee, vinegar and vanilla extract, mix on medium speed until well incorporated. Next add and mix in the lard and cocoa paste until well blended. Add and mix in the eggs one at a time, beating after each egg. (scraping the bowl occasionally). Then add in 2 cups of the flour, stir until well combined. Add in the rest of the flour a little at a time, mix until it forms a soft dough about 2 minutes. Turn the dough onto a lightly floured surface and knead just until the dough is smooth (may need to add a little bit more flour to keep the dough from sticking to your hands but be careful not to add too much. After kneading the dough, it should be soft and smooth, not dry and crumbly. Place the dough into a large bowl greased with cooking spray or brush with canola or vegetable oil, and turn the dough so that it is coated in the spray or oil. Cover the bowl with plastic wrap or clean kitchen towel and place into the oven with the pilot light on or in a very warm location to rise. Let the dough sit until it is doubled in size about 1 1/2 to 2 hours. After that, remove the plastic wrap or towel, punch a hole in the middle to release the air. Knead the dough a few times then using a rolling pin, roll to about a 1/4 inch thick. Cut into donuts using a biscuit cutter or glass, and bottom of a pastry tip to cut a hole in the middle. Place the donuts on a 9x13 inch baking pan lined with parchment paper or wax paper, cover with plastic wrap or kitchen towel and sit it back in the oven (or microwave) for 1 hour until doubled in size.
Meanwhile, in a large heavy pot, add the oil and heat it to 350 degrees over medium to medium-high heat.
Remove the plastic wrap or towel and gently place the donuts into the hot oil and fry on both sides until brown about 30 seconds. Remove the donuts from the oil and place them on a baking sheet lined with paper towels and wire racks to drain the access oil. Drizzle the donuts with the cream cheese glaze all over them, serve and enjoy!
Cream Cheese Glaze
2 tablespoons cream cheese spread, softened
2 tablespoons unsalted or salted butter, melted and cooled
3 to 4 tablespoons evaporated milk
1/2 teaspoon pure vanilla extract
Pinch table salt, if using unsalted butter
2 cups powdered sugar
In a medium bowl, sift or whisk together the powdered sugar and salt (if using). Then add in the cream cheese spread, melted butter, evaporated milk, and vanilla extract, stir until combined and get it to the desired consistency.
