Sourdough Discard Scones
DRY INGREDIENTS
275 grams all purpose flour
75 grams granulated sugar (can use less with chocolate chips)
1 tablespoon baking powder
3 grams salt
113 grams unsalted butter, frozen
1 cup mix ins (dried cranberries, chocolate chips, etc)
WET INGREDIENTS
125 grams sourdough discard
1 large egg
5 grams vanilla extract
45 grams heavy cream
TOPPING (OPTIONAL)
heavy cream for brushing
Coarse sugar (I just used what I had in hand)
Mix dry ingredients and wet in separate in bowls. Grate frozen butter and mix into dry ingredients. Add mix ins now. Next mix into wet until dough forms. Flatten into 8” diameter disc and cut into 8 pieces. Place in parchment lined baking sheet and into fridge for at least 2 hours. When ready to bake, preheat oven to 400* and brush with cream and top with sugar. Bake for 20-25 minutes until edges are golden. Enjoy!
