Ingredients:
• 1 pack banana-flavored jelly
• 1 cup boiling water
• ½ cup cold water
• ½ pack breakfast cream (my cream pack was 200 ml)
• 2 bananas
• 1 pack Petit Beurre biscuits
Recipe:
First, grease the bottom and sides of your mould (if it’s a plastic mould, the dessert will come out more easily). In a bowl, mix the banana jelly powder with 1 cup of boiling water. Use the bain-marie method (place the bowl over a pot of boiling water or heat it in the microwave while stirring) until the powder is completely dissolved. Slice one banana into rounds and place the slices at the bottom of the mould. Mix the dissolved jelly with ½ cup of cold water, then pour a small amount of this mixture over the banana slices in the mould. Refrigerate for 30 minutes to let the jelly partially set. Next, roughly crush the Petit Beurre biscuits (not too finely) and set them aside. In a blender, combine the remaining jelly mixture, half of the breakfast cream, and the second banana (already sliced). Pulse a few times until it is fully blended.
Now take the crushed biscuits and pour a little more than half of the creamy jelly mixture over them. Stir gently to combine (do not overmix to avoid breaking the biscuits too much). Remove the mould from the fridge after 30 minutes and pour the biscuit mixture over the semi-set jelly. Smooth the surface. Then, pour the remaining creamy mixture on top and smooth it out again.
Refrigerate for 4 hours, or place it in the freezer for 2 hours if you're short on time until the banana rocker dessert is set.
Once set, remove the dessert from the fridge, dip the bottom of the mold in hot water for a few seconds to loosen it, then gently press the edges of the jelly with your fingers to release it from the mold. Finally, invert it onto your serving plate.
