Lap mei fan, also known as Chinese waxed meat rice, is a delicious traditional dish typically enjoyed during the Chinese New Year. Here's a simple recipe of lap mei fan in a claypot:
Ingredients:
3 cups of short grain rice
3 cups of water
Assorted Chinese waxed meats (lap cheong (pork, chicken), yun cheong, duck leg)
4 cloves of garlic, minced
1 thumb size ginger, sliced
-10 pcs dried scallop soaked in 1 small cap shao xing wine
Green onions, chopped (for garnish)
few dashes of white pepper
Sauce:
2 1/2 tablespoons of soy sauce
1 tablespoon of abalone or oyster sauce
1 tablespoon of dark soy sauce
1 teaspoon of sugar
1 teaspoon garlic oil
1 tablespoon of sesame oil
Garnish:
Green onions, chopped (for garnish)
few dashes of white pepper
fried pork lard (optional)
