My cook, Celestin, must have gotten tired of making this meal so often, but it was by far my favorite one. Sauce Tomate is what he called it- a tomato and peanut butter based sauce, served over ripe fried plantains (and/or rice).
I share the recipe in my book "Food, Africa, and the Pursuit of Contentedness", but had promised to also share it in a video. So here it is.
