Chicken Pulao
Ingredients:
• Chicken (with bone) – 1/2 kg
• Nutmeg – 1 piece
• Saffron – 1 pinch
• Bay leaves – 2
• Green chilies – 6
• Stock/broth – 1 cup
• Boiled rice – 2 cups
• Ghee – 1/2 cup
• Mint – 1/2 bunch
• Mace – 2 pieces
• Salt – 1 tsp
• Black cumin – 1 tsp
• Black pepper – 1 tsp
• Ginger garlic paste – 1 tbsp
• Kewra water – 1 tbsp
• Ground star anise – 1/2 tsp
• Yellow food color – 1/2 tsp
Method:
First, heat ghee and add ginger garlic paste, black cumin, bay leaves, nutmeg, black pepper, and mace. Then add 1/2 kg bone-in chicken and sauté well.
Now add 1 cup stock, salt, and finely chopped green chilies. Cover and cook on low heat for 10 minutes.
After that, add boiled rice, ground star anise, mint, kewra water, saffron, and yellow food color. Cover again and steam for 15 minutes, then turn off the heat.
Delicious Chicken Pulao is ready to serve.
