Today, I'm introducing how to make Sardine Sushi!!
Sardines have very delicate flesh and oxidize quickly.
This is why the skill of a sushi chef lies in maintaining their freshness while preparing them.
In the video, I’m showcasing a traditional method called “Su-jime”.
You don’t have to use ”Su-jime", but it’s often done to remove any unwanted smell and slow down oxidation.
If you ever get the chance to eat sardine sushi in Japan, I highly recommend trying it!
However, if you find yourself chewing on a lot of bones at a restaurant, it’s probably not a good sushi restaurant!!lol
