Sthridhlja is a tricky to pronounce but fun to make, no rolling pin involved, tagliatelle style pasta. It's been made in Italy since 1450 when Albanian refugees settled in southern Italy. These Arbëreshe communities still retain the language and culture, along with some delicious recipes like this one. Marietta's recipe is so simple it isn't really a recipe - it just needs good ingredients. Try grinding your own dried peperoncini - it makes a big difference to the flavour. One of the popular local Calabrese varieties is called Diavolicchio Diamante and is medium hot (30.000 SU).
For the pasta: 300g semolina flour, 145ml water, pinch of salt
For the dressing: 150ml extra virgin olive oil, 2 plump garlic cloves, 2 heaped teaspoons ground dried chilli peppers of your choice. Optional: 5 dried sweet peppers called peperone crusco
