I did some Boneless and Bone-in Chicken breast on the Weber Smokey Mountain 22". This is the sixth time running this wsm smoker without sand or water in the water pan. I think this is the best way to run the wsm 22 hands down without any gadgets. I only made one adjustment during this cook which was turning the bottom vents halve way open with the top vent wide open. Depending on how new or how many cooks you've done the adjustments could very. Thx for watching.
