Crispy Empanadas | How to Make Empanadas | Cinco de Mayo Recipes

Crispy, cheesy empanadas for the win!! These are were sooo flavorful and SUPER easy!!!
INGREDIENTS:
Vegetable oil for frying
1lb of ground turkey (or meat of your choice)
1 pkg of Empanada dough
8oz of pepper jack cheese, shredded
2 small potatoes, peeled and diced
1/2 yellow onion, diced
1/2 green bell pepper, diced
1 tsp of tomato paste
2/3 cup of chicken broth
1 pkg of Taco Seasoning
OR
HOMEMADE TACO SEASONING:
1 tbs of chili powder
1 tbs of smoked paprika
1 tbs of oregano
1/2 tbs of cumin
1/2 tbs of garlic powder
1/2 tbs of onion powder
1 tsp of salt
1 tsp of black pepper
INSTRUCTIONS:
1. Sauté onion and bell pepper w/ a little salt and pepper or a pinch of taco seasoning in a skillet over medium- high heat for 5-7 minutes until slightly soft.
2. Add ground meat of your choice along with more taco seasoning. Cook until meat is browned.
3. Add in tomato paste, stir until incorporated. Add diced potatoes and remaining taco seasoning.
4. Stir mixture then add chicken broth. Cover the pan and simmer for 15 minutes or just until potatoes are fork tender. Remove the lid and stir mixture until most of the liquid in the pan has evaporated.
5. Remove pan from heat then stir in cheese of your choice. In a separate pan, begin heating oil to fry your empanadas in.
6. To assemble- Add about a tablespoon of filling to the center of your empanada dough and fold the dough over. Crimp the edges w/ a fork
7. Fry for about 3-5 minutes per side until empanadas are golden brown and crispy.
8. Drain on a wire rack and serve w/ salsa, sour cream, guacamole and/or other condiments of your choice!
