BETTER THAN STARBUCKS MOIST VEGAN PUMPKIN BREAD (ORIGINAL RECIPE): https://thebananadiaries.com/vegan-pu...
I adapted it for less oil and sugar below:
1 cup pumpkin puree
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 single serve container of applesauce (about 1/3 cup)
2 TBSP vegetable oil
1 tsp vanilla
1/4 tsp salt
2 tsp pumpkin spice
1 tsp cinnamon
1 1/2 baking powder
1/4 tsp baking soda
2 cups flour

Streusel Topping:
1/2 cup all purpose flour
1 tsp pumpkin spice
1/4 cup brown sugar
3 TBSP melted butter (I used dairy free)
1 tsp vanilla
pinch of salt

Preheat oven to 350F. Grease a loaf pan and line with parchment paper:
If using streusel topping, whisk together the ingredients till crumbly and set aside.
For the pumpkin loaf, whisk together wet ingredients and then add in spices. Lastly, add the flour and mix in just till combined, being careful not to over mix! Batter shouldn't be entirely smooth, just mix until there is no dry mixture showing.. Pour into prepared loaf pan, sprinkle streusel on top. Bake for about 1 hour to 1 hr 15 minutes if using streusel topping or 55 to 60 minutes without.
