Ingredients
For the Pot Roast:
• 2–3 lb chuck roast
• 1 small onion, sliced
• 16oz baby carrots
• 6 celery stalks, cut
• 24 oz baby golden potatoes
• 1 cubanelle pepper
• 1 poblano pepper
• 1 cup red cooking wine
• 6 cups water
• 1 tablespoon Accent seasoning
• 1 tablespoon smoked paprika
• 1 tablespoon onion powder
• 1 teaspoon Cajun seasoning
• 1 teaspoon Creole seasoning
• 1 teaspoon Adobo seasoning
• 1 teaspoon complete seasoning
• 1 tablespoon garlic powder
• 1 teaspoon chicken bouillon
• 2 tablespoon better than beef bouillon
For the Gravy:
• Pan juices from the roast
• 2 tablespoons of cornstarch
For the Sides:
• 2 cups parboiled rice
• 4 cups water or broth
• 1 lb fresh green beans, trimmed
• 1 tablespoon garlic butter and avocado oil
• 1 tablespoon Accent seasoning
• 1 teaspoon smoked paprika
• 1 teaspoon onion powder
• 1 teaspoon Cajun seasoning
• 1 teaspoon Creole seasoning
• 1 teaspoon Adobo seasoning
• 1 teaspoon complete seasoning
• 1 tablespoon garlic powder
• 1 teaspoon chicken bouillon

Directions
Step 1 – Sear the Roast
1. Pat the roast dry and season generously with seasonings listed above.
2. Heat avocado oil in a large pot.
3. Sear the roast on all sides until deeply browned (about 4–5 minutes per side).
Step 2 – Build the Base
1. In the same pot, add onions, carrots, and celery. Cook for 4–5 minutes until softened.
2. Add 6 cups of water.
3. Add 1 cup red cooking wine.
4. Add Better Than Beef bouillon.
Step 3 – Cook and Prepare Gravy
1. Let roast cook for 1.5 hours.
2. Remove roast and slice thinly.
3. In a measuring cup, mix 2 tablespoons of flour or cornstarch with water until smooth, then pour back into pot.
4. Return roast to pot to finish cooking.
Step 4 – Cook the Rice
1. Use a rice cooker.
2. Rinse rice under cold water until the water runs clear.
3. Use white rice setting on cooker.
4. When cooker turns off, fluff rice with a fork and keep warm.
Step 5 – Prepare the Green Beans
1. Rinse fresh green beans and place in pan.
2. Season with:
• 1 tablespoon Accent seasoning
• 1 teaspoon onion powder
• 1 teaspoon Cajun seasoning
• 1 teaspoon Creole seasoning
• 1 teaspoon Adobo seasoning
• 1 teaspoon complete seasoning
• 1 tablespoon garlic powder
• 1 teaspoon chicken bouillon
3. Cook in garlic butter and avocado oil.
4. Add water and cook to your liking.
